So I'm on my week off now. Yay!! I can't even tell you how frakkin' happy I am about that!! I just need it. Need to get centered, need to think of nothing...no students, no work...

As a lovely beginning, here's what I made for dinner tonight.I think [livejournal.com profile] dionneshea  would approve....



It's from Gordon Ramsay's Healthy Appetite; Mango Avocado Chicken (I used pork tenderloin), organic baby greens and dijon/orange vinaigrette. I used pork because I was baking tenderloins, and I used Dijon instead of grainy mustard because...well because I hate grainy mustard and I love Dijon. LOL Anyhow, it's very good, my son loved it. Plus we had Velvet Potato Puree from Tyler Florence's Ultimate cookbook, which is just Yukon Gold potatoes put through a ricer then lots of butter, cream (or in my house, 1%) salt, pepper and olive oil.

It was very nice. If I had money, time and Michael Smith's pantry, I'd be a very good cook. LOL

Went out and had dinner with Ashleigh, Jeff and AJ last night for Valentine's Day. We ended up at the Cheesecake Cafe, and waited for about 45 min. for a table. We went early thinking everyone else would go later. Wrong. When we were thinking of going, (7pm), it was much quieter. Figures. So we went at 5 and had to park a block away, and stand with a bunch of very unromantic people. LOL

It was good though, I had fish and chips because AJ was talking about how good the fish and chips are in the UK. He's been there twice in the last few months and is going with Ashleigh next month again. Anyhow, ours isn't nearly as good and I had to pick my fish out from the mounds of batter, but it was enjoyable.

Asheigh and I shared a piece of Kahlua Mocha cheesecake, while the boys had Chocolate Strawberry and Rolo cheescakes. They were all pretty good. I think cheesecake is like sex and pizza. Even when it's bad, it's still pretty good. Actually maybe that's just pizza. LOL

Anyhow afterwards we went to Starbuck's, because we're  that lame...sigh...Ashleigh and I both worked yesterday, and AJ used to work there...it's just sad, anyhow, Ben gave us free drinks and we sat in our comfy chairs for a couple hours, then AJ went to the GALA dance, Jeff and Ash went to the movies and I came home because I'm 19 yrs. older than them and I was tired. It was however, one of the most enjoyable Valentine's Days I've had in quite awhile. The thing with these youngsters is that they're intelligent, so the conversation is always good. I like that.

Tonight is Ben's birthday so I made a Chocolate Bundt Cake, or as Tori calls them, Chocolate Butt Cake. We're going to sit and watch Season one of Star Trek: Voyager...I can't even believe that's what we're doing, but it is. Hee hee.

Tori was crying last night because in her shopping with her boyfriend she left going and getting my chocolate at Callebaut too late and they were closed. So she texted me and said she'd get them today, but Callebaut doesn't open on Sundays, and tomorrow's a holiday so I told her to forget it.

Then she calls me, crying and apologizing...she's so funny sometimes. I told her I didn't care then I decided that maybe she should go find me Chocolat the movie instead. We had it on VHS and I think it got lost in the flood. I'd rather have it on DVD anyways. I want to watch that when I get back tonight.  

So, all in all, not a bad weekend.
